吃在纽西兰


位于天涯一隅的纽西兰风光明媚,宁静安详,是一块修身养性的人间静土。这里冬无严寒,夏无酷暑,气候宜人,举目尽是看不完的湖光山色,数不尽的田园绿野;晴空总是那么湛蓝清澈的,空气是干净清爽的,置身于一些人烟罕至的小镇,有与世隔绝的失落;而投身于参天古木、冰川峡谷之间,大自然的原始却让人眷恋。


了不假修饰的如画美景,纽西兰也不缺独特罕有的道美食。纽西兰的种族以欧洲人为主,传统饮食是牛排、烤肉、鱼柳、薯条(土豆条)、水煮蔬菜、以及餐后布丁等。但属于一个移民国,来自世界各地的移民丰富了当地的烹调技术,为纽西兰的传统烹调带来新的变化,创造出富于纽西兰特色的美食。
纽西兰盛绵羊,来到西兰如果不尝一尝纽西兰的羊肉,可说虚行一躺。纽西兰的羊肉柔软嫩美,而且几乎没有羊膻味。羊肉可依年纪和价格分三个等级:一岁以下的小羊(lamb)价格品质最高,其次是一岁至两岁以下的羊肉 (hogget),最便宜的是两岁至五岁不等的老羊肉(mutton)。小羊肉最适合用来做烤羔羊肉、羔羊排、煎和爆炒也适宜;而老羊肉腥膻味较重,肉质也比较粗,适合用以焖或炖煮。至于牛肉和鹿肉(venison),也值得一尝。尤其是鹿肉,肉质柔软鲜美。但鹿肉是瘦肉,脂肪和胆固醇很低,味道清淡。如果煮的不好的话,吃起来便淡然无味。

起纽西兰,国内一般人便会联想起纽西兰的蕨叶(Fern Leaf)牛奶粉,然而纽西兰闻名的乳制品并不止于此。它的牛乳、乳酪、奶油等,也是举世闻名的。这些乳脂浓厚的乳制品,是洋人日常饮食不可缺的,但许多中国人却对此乳骚美食敬而远之。另一乳脂美味是冰淇淋。纽西兰的冰淇淋,奶味够,质量高,它甜甜的诱惑,魅力不可挡。这里驰名的冰淇淋是TIP TOP品牌,在马来西亚偶尔也可以买到的。

 
和乳制品分不的甜点和糕点也是奇异人(Kiwi - 即纽西兰人)的最爱。其中一道果粹甜点是蛋白蛋糕 (pavlova) - 一種以大量蛋白做成外脆內軟的甜点。基本上是蛋白加糖一起搅打,然后烘焙而成。通常会以新鲜水果如草莓、芒果等点缀,很多时候也加上冰淇淋和搅打的鮮奶油(whipped cream),吃到嘴里甜滋滋的,甜得化不开。

西兰国,出产的海鲜也很多。著名的海产有贝类如牡蛎(oyster)、贻贝(mussel)、干贝(scallop)、大龙虾(当地称之为crayfish)、鲍鱼(abalone - 当地又称paua)和鲑鱼(salmon)。特别值得一提的是纽西兰的青唇贻贝(green mussel)。这种贻贝颗粒大,约两寸长,甜美多汁,在各大超市都可以买到。我喜欢吃它的原汁原味,通常就水煮了沾着醋吃。但它实在是太甜美了,无论蒸、煮、炒都一样好吃。另一种可以和它媲美的贝类,要数牡蛎(oyster)了。尤其是产于南岛和斯图尔特岛(Steward Island)海峡之间的一种牡蛎(bluff oyster),由于没有污染的顾虑,生吃更是鲜美可口,是纽西兰的海鲜明菜

除了特大的贝类,还有特大的龙虾。这里龙虾价钱昂贵,而且有捕捉限制,被视为珍饍。纽西兰的大龙虾口味鲜美,道地的吃法是整只用水煮过,淋上檸檬汁便可吃。有点单调乏味是吧?奇异人吃东西有时候是挺乏味的。


一纽西兰特产是鳟鱼(trout)。这种鱼在餐馆或饭店没有售卖,要吃得自己去钓才行。而北岛的淘波湖(Lake Taupo),便是世界闻名的彩虹鳟鱼(rainbow trout)垂钓区。此外,还有一种特小的银白色小鱼(whitebait),也是当地的美食。这种小银鱼有季节性,在西海岸和南岛特别多。道地的吃法是加鸡蛋混点面粉去煎。每次吃时就会想起国内的"蚝煎"。

这些"名牌"鱼除外,其他一般的食用鱼也一
样新鲜美味。洋人吃鱼一般是去骨又去皮,只吃剩下的鱼片。一般的吃法是烤、煎和炸鱼片。而价格比较高、肉质特好的唇指鲈(tarakihi)和红鲷鱼(snapper),便是做炸薯条常用的鱼类。

水果方面,弥猴桃(kiwi fruit)、鳄梨(avacado)、杏桃(apricot)、油桃(nectarine)、草莓等,皆是新鲜甜美的本地水果。你知道吗?弥猴桃(就是奇异果)虽是纽西兰的“道地”水果,但此果原产自中国杨子江河谷,是移植到纽西兰才“出名”的。弥猴桃含有丰富的维他命C和其他矿物质,含钠且胆固醇含量低,是一种营养丰富的水果。每年的五到七月,是弥猴桃的收成季节,一时弥猴桃遍地,价格低廉。记得在国内时,把价格昂贵的弥猴桃当珍品,在这里住下来后,已完全没有想吃弥猴桃的欲念了。

可是香脆甜美的纽西兰苹果倒是吃了不少。尤其是著名的Pacific Rose品种,不但颗粒大,颜色也很好看。吃起来脆脆的,味道好得难以形容。除此之外,比较普通的品种还有 Gala, Granny Smith, Red Delicious, Golden Delicious 等等,都是当水果吃的。至于其他种类如Strummer和家中种植的品种,一般就用来煮了做成甜点。

他屋后院子里种植的本地水果也很多。水果成熟时,便有人摆了档子在路边售卖。夏天在路边可买到一种由橘子和柑接种而成的柑橘叫tangelo。还有一种很清甜的本
地水果,叫feijoa - 我们叫它费佳娃。它就像国内的芒果树一样,很多人院子里都有一棵。


吃在纽西兰,不可忘了毛利人的传统石头火锅(hangi)。这火锅是在土地上挖个坑,放入木材,然后把石头放在木材上。接着起火把土炉中的石头烘热,把肉、海鲜和蔬菜等包裹好,放入土炉中,埋上树叶和泥土,让蒸热的石头把食物熏熟,保存了食物的原汁原味。


毛利人的传统美食还有淡水鳗鱼(eel)和羊肉鸟(mutton bird)。据说羊肉鸟这道美食,味道像鱼又像鸡呢。此外,毛利人也爱采集一种长在河边的蔬菜叫puha的当菜肴。这菜 很像国内的“西洋菜”(watercress),此菜奇异人偶尔也用来做沙拉。



哇,原来纽西兰的美食也还真不少啊。柔嫩的羊肉、甜美的蛋白蛋糕、新鲜的海产、原汁原味的毛利火锅,不胜枚举。如果有机会到到这世外桃源一游,除了饱餐秀丽的美景之外,可别忘了品尝这些乡土名菜哦。(2003年写于纽西兰)

Hello. I’m Lee Yue. Even though I am still a ‘freshman’ in your class, I enjoy your lesson very much - honestly, throughout the year.
In my opinion, a good teacher is characterised with a few characteristics: patient, caring, knowledgeable, passionate about the job,humourous and friendly. It is also important for a teacher to interact with students.

For Teacher’s information, I think you deserve to be a good teacher. You have gained the ‘credential’ to be a good teacher, from my point of view. The English class is really fun when Teacher cracks jokes thatmake us burst out laughing. As a result, it boosts my interest in English.
P.S.
I didn’t find any weakness in you, Teacher because you are already a great English teacher from my point of view.

A good teacher should be knowledgeable, caring and humourous. Teachers must prepare well before teaching and prepare neat worksheets for their students.Neat worksheets with some funny jokes and graphics will make students more interested in the studies. A good teacher should be able to control the noise of the class.

My English tuition teacher’s teaching is clear and can be understood easily. She explains well and inspires us. She teaches from the heart and everything she does is just for our sake – to make us outstanding students.She tries her very best to ensure we know what she is teaching and to obtain good results in every test.
I hope she would share more stories and experiences with us. Teacher, hope you won’t mind me saying one thing: please do not ask us not to follow your class the following year. It is quite sad to hear that you cannot teach us in Form 4 next year. I really enjoy your lessons throughout these two years.
I would like to know your more. That’s why I hope you can share with us more stories and experiences as some of them which you have shared with us are really interesting. I would like to learn more vocabulary as my vocab is not really good but I think grammar is also important.

Overall, I think you are quite a passionate teacher.

A good teacher should be humourous, patient and knowledgeable. When a student does not understand a question, a good teacher should teach him or her patiently. A good and knowledgeable teacher is able to explain well and make sure his or her students understand the teaching well. A good teacher should have passion in teaching but not greed for money and power.
The outstanding features of my English teacher's teaching are that she can speak fluent English and her students can understand her well. She always inspires me in her own way.
The weakness in my English teacher is probably that she hardly shares her experiences with us.
I would like to suggest that you be more humourous when teaching. I also hope that you can be more patient.

唱歌 追梦


谁没有梦?梦是生命的异彩,没有梦,人生会更苍白。唱歌为什么是梦?因为我很早就关上唱歌的门,断定我是不会唱歌的。N年之后再追梦、寻梦,也算执着吧。

念书时代音乐科的成绩一般般,拿乙等的比率多过于甲等; 而每次老师遴选合唱团团员,都没有我的份。那个年代哪敢像“百万小学堂” 的学生那样呼喊: “老师,选我! 选我!” 久而久之,就相信不会唱歌是个就是事实。
然而我还是很爱音乐的,虽然我爱文字多一些。音乐与文字一样,是人生的色彩.“音乐是春天的风,夏天的雨,秋天的景,冬天的雪” – 忘了哪里看来的。喜欢音乐就是这样,没有太多理由。唱歌的一扇门关了,我的音乐之门却是敞开的。
有很长的一段日子,我的音乐世界里尽是乐器发出的声音,没有歌声。那时候,我喜欢乐器的声音多过于人的声音,那是一段对 “人” 感到失望、悲观、甚至厌烦的岁月,像一只寄居蟹,将自己封闭在一个叫做古典音乐的外壳里: 遥远的年代 - 莫扎特、贝多芬、萧邦、约翰 威廉洁姆斯,晦涩的乐声 - 电子琴、长笛、钢琴兼古典吉他,别人进不来,我亦出不去。




憋屈异国他乡的日子,我的音乐世界里有了比较多的歌声。 那个年代,吃洋餐、说洋话、交洋友、听洋歌,是半个洋婆子。也是那个时候,爱上了Celine Dion 、Marriah Carey  、Whitney Houston ,尤其喜欢 Celine Dion 近乎完美的嗓音,那样清亮空灵,纯美无暇.念书的沧桑岁月,是音乐在陪伴苦闷的心。


感恩生命里曾有一位很好的长笛老师 Elizabeth Barker。每个礼拜一堂音乐课,断断续续地上,也是寂寞心灵的慰藉。 在长笛老师的熏陶下,除了古典音乐,也爱上了Beatles 和音乐剧大师 Andrew Lloyd Webber 不朽的的歌。

那些日子也排斥中文歌(包括中文),真的很排斥,或许我只是在排斥中国人、在反传统 ,“恨屋及乌”,或许是这样;中文是代罪羔羊。而今,当一切尘埃落定,才恍然惊觉,空白需要填补,于是是重拾心情 ,pick up where I left off - 我从哪里停下, 就在哪里开始吧。十年空白后的复始,便是重新接触中文,包括听中文歌. 有点障碍,不过很快就寻回失落的根...

桃红翠绿 橘黄鲜果沙拉 甜点



突然想吃鲜果沙拉(fresh fruit salad)甜点-我在新西兰学会的的第一道老外料理。

记得踏上新西兰国土那,舅舅来接机,把我带到他的万利中餐外带店(Ban Lee Chinese Takeaway)。当晚,餐厅有个自助餐会。清一色白布铺盖的餐桌上,洁白的沙拉磁盘里就摆放着这艳丽的鲜果沙拉:桃红、翠绿、橘黄,犹如花团锦簇。舅舅说:“很容易做的。来,我教你。”就这样,我依照指示把各种水果切成方糖大小的丁状,放入沙拉碗中混合,然后加入大量白糖汁拌匀,移置冰箱里。一小时后,亮丽的鲜果沙拉就出炉了。


做学生的日子里,每逢大学里有什么节日庆典,这鲜果沙拉就派上用场。所到之处,总不乏赞美之词。有个厨师舅舅真好!舅舅很早就告诉我,老外爱吃甜品,这鲜果沙拉要多下点儿糖。还有,鲜果沙拉是很少单独当水果吃的,一般上都当做甜点,和雪糕一起吃。想想清甜的果,配上冰凉的雪糕,或许就是老外眼中的佳配吧。

舅舅这道鲜果沙拉要以翠绿枣红的爽口苹果为主材。在新西兰,苹果便宜又好吃。我常选用新西兰的名牌“Pacific Rose” 苹果,因为它的脆口无与比美。有苹果为台柱,自然给沙拉增加不少“分量”,而其他的水果就可酌量增减。

另一台柱便是奇异果(Kiwi Fruit)了。奇异果虽是新西兰的特产,可是在当地却并不是每个“奇异人”(新西兰人也自称“Kiwi”)都爱吃。在旺季时,奇异果贱卖也无人问津。除了原味的绿色奇异果之外,还可选用“第二代奇异果” ,即奇异金果(Zaspri)。无论绿色奇异果抑或金色奇异果,切丁后,它们那阳光一般的光环,都会为沙拉增添异彩。此外,要显示沙拉的艳丽,胭红的草莓、鹅黄的桃子、红的绿的葡萄不可少。若奢侈一点,加些鲜红的小樱桃,更是锦上添花。


然而今天,我无法复制记忆中那道五彩缤纷的鲜果沙拉甜点。在 JUSCO折腾了老半天,就是找不到我要的水果。不能用西瓜:它是那种切成丁要出很多汁的水果,不能做水果沙拉;鲜橙也不行,它很难切成丁状。至于香蕉,甜度还好 ,但切丁后很快变色,若非用不可的话就得在甜点上桌前才加入。唉!不想放弃,于是买了些看起来还象样的苹果、奇异果和葡萄,在罐装水果部挑了罐装丁状的波罗蜜,还有龙眼、荔枝等,姑且一试吧。


怀着有点怅然的心情把鲜果沙拉做好,放到冰箱里。突然,门铃声响起,原来有朋友到访。那就吃个鲜果沙拉甜点吧。找来了冰凉的雪糕,企图以雪糕的清甜遮掩甜点失去的艳丽色彩。朋友端起一杯甜点,说:“水果单独吃就好,不要雪糕更好吃”。

都是我的错。简简单单的一道鲜果沙拉,怎么弄得那么复杂!是我把鲜果沙拉定了型,把自己
在自己造的框框里,所以不胜负荷啊。
